The Project

How might we launch and scale a quick-serve concept within an established specialty market while driving immediate revenue and long-term growth?

 

Bites by Sickles was developed as a modern quick-serve extension of a legacy food market brand. The goal was to create a concept that felt fresh and accessible, while maintaining the quality and reputation of the Sickles name.

Goals

  • Drive immediate foot traffic and repeat purchases

  • Attract a younger, convenience-driven audience

  • Build a cohesive experience across menu, marketing, and in-store execution

Approach

Led marketing strategy and concept development from the ground up, including menu creation, business planning, and campaign execution.

  • Partnered with chefs to develop a high-quality, operationally efficient menu

  • Built and executed cross-channel campaigns (billboards, in-store, social)

  • Leveraged Toast POS to support operations and inform strategy

Results & Impact

  • $949K in annual revenue

  • +23.7% growth in March, +19.6% in December

  • Increased foot traffic and sustained customer engagement

  • Successfully positioned Bites as a revenue-driving brand extension
